چکیده

People are increasingly concerned about how meat affects the environment, human health, and animal welfare, yet eating enjoying remains a norm. Unsurprisingly, many people ambivalent meat—evaluating it as both positive negative. Here, we propose that meat-related conflict is multidimensional depends on people’s dietary group: Omnivores’ felt ambivalence relates to multiple negative associations oppose predominantly attitude towards meat, veg*ans’ various attitude. A qualitative study (N = 235; German) revealed omnivores veg*ans experience due with animals, sociability, sustainability, sensory experiences. To quantify in these domains, developed Meat Ambivalence Questionnaire (MAQ). We validated MAQ four pre-registered studies using self-report behavioral data 3,485; German, UK, representative US). Both reported ambivalence, but differences across domains their consequences for consumption. Specifically, was associated less consumption (especially sensory-/animal-based ambivalence) more sensory-/socially-based ambivalence). Network analyses shed further light nomological net of while controlling comprehensive set determinants By introducing MAQ, hope provide researchers tool better understand accompanies behavior change maintenance.

This paper overviews the biophysical methods developed to gain access to meat structure information. The meat industry needs reliable meat quality information throughout the production process in order to guarantee high-quality meat products for consumers. Fast and non-invasive sensors will shortly be deployed, based on the development of biophysical methods for assessing meat structure. Reliab...
